      Flan is undoubtedly the most popular dessert in Mexico where it is loved for its velvety texture, rich flavor, and beautiful presentation. Unfortunately, most of the versions served in the United States come nowhere close in either flavor or appearance, and the majority include large amounts of fatty cream.

      In my first two books I included flan recipes that were the best I had tried at the time. Looking back, although they were quite good they were far from perfect. They were a bit difficult to make and, being made in ordinary pie pans, they lacked the characteristically elegant shape of those I had enjoyed in Mexico. One day, in gratitude for a favor, a friend from Guadalajara presented me with a special mold, designed specifically for flan. Inside it was a copy of her family recipe. I was astonished when the mold and recipe produced, without a doubt, the finest flan I had ever seen or tasted. The shape was elegant, the texture was velvety, and the flavor was superb. It immediately elevated the dessert to the A-list. To my further amazement, with only four ingredients and no boiling of cream or tempering of eggs, it was child’s play to prepare. To my even further astonishment, although it was incredibly rich it had the least fat and calories of any recipe I had tried. I put the recipe in my third book, Jim Peyton’s New Cooking from Old Mexico, and have presented it to rave reviews in my classes ever since.

      When I decided to offer products that I consider superb in every way, and that are difficult to obtain in the United States, this was the first one I thought of. After a great deal of detective work, I located the manufacturer of my favorite flan mold and, after further adventures, was able to import a few of them to the United States. I am proud to offer them to Lo Mexicano visitors. Included with the mold are the original recipe and several inspirational modifications, including recipes for chocolate, dulce de leche, and pumpkin flan.
